Shortcuts App has a growing library of objects and symbols that allow you to make a variety of custom app icons.
Click the icon to the left of the app’s name and choose a color for the app icon.

Now, click on Glyph and choose from a plethora of options. Explore different glyphs with custom categories like Objects, Symbols, and People at the bottom.
After selecting the desired icon, tap Done in the upper right corner of the screen.

Next, tap the menu icon in the upper-right corner of the screen and select Add to Home Screen.
Note that you can also display this custom app icon on the Apple Watch, pin it in the macOS menu bar, and even use it as a quick action on the Mac.

Finally, click Add in the upper right corner to finish. Your custom iPhone application icon will now appear on the Home screen.

Notes

While this hack is pretty solid, it will first trigger the Shortcuts app before launching the app.
Turn off Shortcuts notifications if you wish to open the app without invoking the Shortcuts app. To do this, go to Settings app -> Screen Time -> See All Activity -> Notifications -> Shortcuts. Now, turn off the switch next to Allow Notifications.
